all i can remember is that oil in water gives a cooling effect and water in oil gives a warmish effect on the skin so yeah u could so sumthin with that?
there is also sum indicator that turns into droplets in an oil in water but stays the same in water in oil or sumthin

if u use litnus blue solution with the emulsion you are testing it is easy to distinguish if it is oil in water or water in oil...
if its a water in oil: only tiny droplets of the litnus solution stick to the water particles.. but if its oil in water then the colour should spread throughout the emulsion.. plus yeh wot corbs said.. water in oil has a warming effect on skin and oil in water has a cooling effect! :D
