vet course is offered at USYD, which at the moment I would like to do. However, am I only able to do this as a postgraduate degree? What other jobs could I get that involves working with animals directly or indirectly, other than research - aka going into the animals habit to follow their patterns?

Animals habitat* - is that what you mean? There are opportunities within the School of Biological Sciences; you can study the effects of climate change on a particular animal's habitat etc (even through the discipline of Anatomy and Histology). Best to contact them or go to the Biological Science welcome and ask the senior students/PhD students your questions during O-Week.

You can undertake a Masters Program after the completion of your undergraduate:
Master of Animal Science - http://sydney.edu.au/courses/programs/master-of-animal-science/Master-of-Animal-Science
Master of Veterinary Science - http://sydney.edu.au/courses/programs/master-of-veterinary-studies/Master-of-Veterinary-Studies
[Both 1 Year Programs - job opportunities and roles will vary]

This is the most important thing to consider. There are a gazillion people wanting to work with animals. Therefore there are a gazillion courses designed for these wannabe students. However many of them end with unemployment. Think wisely & research thoroughly the graduate outcomes and career progression.
One in five veterinary graduates are unemployed according to GradStats the government resource. This has doubled in the last year.
