Well it all depends on your personal tastes, and what kinda courses u want to study, because ppl like "old" uni's like Sydney better, and other ppl like "new" uni's lile UNSW better. And each uni is good at different things.

In general, UNSW is a very multicultural uni, with 48% of students coming from different backgrounds. It also houses the best Faculty of Commerce+Eco in Australia, and one of the best Law and Engineering schools. It has the most five stars in the Good Uni's guide, and has the best graduate salaries. However, this might mean jack if u wanna goto a uni closer to the city (ie UTS)

Why?
Actually, since Sydney is cutting places, I wouldn't be surprised if the UAI cutoff for Sydney commerce is infact higher than UNSW this year

But since UNSW isn't cutting places, then more ppl will apply for UNSW, which really evens out the system doesn' it?

Generally people will be applying for both. After all, with 9 slots you haven't got much to lose. What will really matter is how high on the list they put the courses (and subsequently institutions) and I think that is what influences cutoffs for indiviual midrange courses most.

and where are the other 52% from? I think its WAY more multicultural than just that 48% figure from different backgrounds!

That 48% figure comes from the Good Uni Guide, where they say "48% of students' parent's were not born in Australia"
I'd say thats roughly correct, don't underestimate the Australian population there :)
