if u take egg whites, and whisk em up, they become like white and fluffy yet sorta stiff... like a cross between styling mousse and bubble bath foam. (if ur too pov to own a whisk, it actually works with a fork! but it takes longer and builds up ur arm muscles lol).
the white catches lotsa air in bubbles, and you don't want to pop them, so when u mix it with the batter, u kinda fold the two into each other, like mixing gently.
(haha... i am so on the way to becoming ultimate houswife...)

Gosh, that takes me back to the old Primary School After School Care, where we took icing sugar, added colour, then put it on arrowroot biscuits and added lollies like smarties, jelly beans, gummi bares, freckles, 100s&1000s etc, on the biscuits, and then it'd set in the icing sugar - YUUUUUUUUUUUMMM

Cinnamon French Toast

Yields: 4 servings

Use thick slices of French bread

Beat together: 4 eggs, 1 cup milk, 1/2 tsp Cinnamon, and 1 tsp Vanilla

Dip bread into egg mixture. Place on greased grill and brown nicely on both sides. Serve with butter, syrup and sifted powdered sugar.

mmmmm.... you know, I still have a whole lot of Cinnamon & Vanilla at home & they still haven't been used.
This gives me an excuse to use them :D

this one is kinda simple and yum..(I stole this off a nespaper:D)

Cheesy Corn and Zucchini Muffins

Ingredients:
310g creamed corn
1/2 cup reduced fat milk
2 eggs
2 cups self raising flour
1 cup reduced fat grated Australian cheese
1 medium zuchinni, grated
2 teaspoons wholegrain mustard

Method:
Whisk together corn, milk and eggs in a large bowl until combined. Add remaining ingredients and stir until just combined. Spoon mixture into 12 lined, non-stick 1/2 cup muffin pans. Bake at 200C for 15-20 minutes or until golden brown and cooked through. (Makes 12)

Banana Smoothies

How does everyone like their banana smoothies, in all their variations?

I like with:

Milk,
LOTS of Bulla vanilla ice cream (it HAS to be Bulla)
2 bananae

So it's really nice and thick. Mmmm...

But, ideas to spice it up a bit? Working at Wendy's we added honey or malt, but honey just makes it a bit mmmmmm,..... as in yuck. :D

Hmm the recipe...
I can't share it! Then it will no longer be special coz everyone else will be making it :( It only tastes good if I cook it for people, because I add that extra ingredient, LOVE. Hahahaha.

I had that the other day. That put heaps on ham in so I wasn't impressed, but it was still good.

I prefer svaoury crepes over sweet crepes, although the orange ones are nice :D

here's a basic recipe

INGREDIENTS
500 g (3 cups) of flour
4 eggs
1 liter (4 cups) of milk
2 tablespoons oil
pinch of salt
2 tablespoons rum
A little butter

To make the batter:
Put the flour in a mixing bowl. Make a well in the flour and break the eggs into it. Add the salt, the oil and a little of the milk. Using a whisk, or in a food processor, beat the mixture well. When the batter is smooth, keep beating and add the rest of the milk little by little. Add the rum at the end. (The batter can also be flavored with orange blossom essence or Grand-Marnier, for example).

To make the crêpes:
Melt a small piece of butter in a hot skillet. Using a ladle, pour a small amount of batter on the pan while swirling it to distribute the batter evenly and make a thin crêpe. Let it cook until golden brown (it will take only a few seconds), then turn the crêpe and cook the other side the same way.

I guess its up to everyone to fill in their own fillings

i made biscuits for the first time the other day, they were peanut ones and really nice and tasty :)

Ok, I got a few. All really simple, otherwise I wouldn't remember them!

Nachos

1 can refried beans
1 can other beans (red kidney, three bean mix, ect)
1 tub salsa
1-2 pks corn chips
grated cheese

*Mush the refried beans and salsa together
*Rinse the ther beans and stir in.
*Place a layer of cornchips in a tray (it's a good idea to line it with paper or foil or something)
*Put sme bean mix on top
*Sprinkle with cheese
*Keep layering it utill you use all the stuff
*Cook it in the oven at around 200 for 20 minutes or so. Yum!


Lemon Meringue Pie[u/]

1 pie crust
3/4 cup sweetend condenced milk
2 egg yolks
1/2 cup lemon juice
3 egg whites
2/3 cup white sugar

*Stir the milk, egg yolks and juice together.
*Beat the egg whites to stiff peaks (use an electric beater. Stiff peaks means you can turn to bowl upside down without anything falling out. People are very supesticious about egg whites, and you should use a ceramic bowl (no plastic) that has been in the freezer for 10 min, and if you get ANYTHING in the whites (yolk, water, grit, etc) they won't work.)
*Beat in sugar one spoonful at a time.
*Pour milk mix into crust.
*Spoon egg whites over filling.
*Cook at 200 for 10 min, untill the top is golden.

I LOVE to cook! Total stress relief! I love fidly things to. It's the only thing I have patience for.

Chocolate Fondant

Resurrected this old thread for a veeery nice recipe:

Chocolate Fondant
Serves: 8
Preperation: 20 mins
Cooking: 1hr
This recipe can be prepared four days ahead.

Ingredients
1 cup (220g) caster sugar
1/2 cup (125ml) water
250g dark eating chocolate, chopped
250g unsalted butter, chopped
1/2 cup (75g) plain flour
3 eggs, beaten lightly


Method
1. Preaheat oven to moderate (180°C/160°C Fan-forced). Grease a deep 20cm round cake pan; line base and side with baking paper.

2. In a mdeium saucepan, combine the sugar and water, stir over low heat until sugar is dissolved. Add the chocolate and butter, cook, stirring over a very low heat until smooth.

3. Sift the flour into a large bowl, slowly whisk in the eggs, one at at ime. Gradually whisk in chocolate mixture until mixture is smooth. Pour mixture into prepared pan.

4. Place pan into a baking dish with enough boiling water to come halfway up the side of the pan. Bake in a moderate oven for 1 hour. Remove from dish and cool in pan.

5. Refrigerate for 12 hours. Wipe the base and side of the pan with a hot, wet cloth. Turn the cake out onto a serving plate and decorate with chocolate curls, if desired.

6. Serve with vanilla ice-cream.


Suitable to freeze. Chocolate mix suitable to microwave.

Peanut Butter Bread


1. Toast 2 pieces of bread
2. While toast still hot, smother with peanut butter
3. consume when peanut butter has melted on toast



mmmmmmmmmmmmm my favourite :D

A really yummy brekkie is banana (preferably a softish one that needs using up) spread on toast with honey on top. Gives you heaps of energy too.

okies i got 2 - both are YUMMY drinks! (sorry if any are repeats!!)

1. Mocha Milkshake

1 large scoop plain ice cream
1 teaspoon cofee
1 teaspoon milo
1 cup milk

stick it all in a blender and blend till its all smooth.
pour in glass and drink!!

2. Banana Smoothie

1 banana cut up a bit
2 cups milk
1 SMALL scoop plain ice cream (optional)
1 heaped teaspoon milo (optional)

stick it all in a blender and blend till its all smooth.
pour in glass and drink!!
