The SAM UAI calculator seems to say,
that i need to get 80 in all my subjects to scrape a mere 70?

Like, sick school, they said "all your subjects scale quite well, you could do advanced english, but thats your choice".

And, to top it off, my music teacher is a complete half wit. :D

I need a MINIMUM of 70 to atleast keep my options open (barely),

not surprising given that 80 is just above average(median) for those subjects.

depends what people consider a "good" uai.
I got 93.30 with:
English std - high band 5
General math - high band 5
Pdhpe - mid band 6
Business studies - band 6
Retail VET (one of the worst scaling subjects) - band 6

You're not screwed. You chose those subjects because you like them and you're interested in them. Then go for it.

Scaling doesn't matter as long as you perform really good in all of your subjects :D

and if you love all of them then that's even better because studying for something you love is better then studying for something you hate :)
