Well theoretically speaking a CVT enables the engine to stay at optimum revs constantly and would hence save fuel. This is the exact same concept as to why more gears are better. Why a four speed is better than a three speed, etc. More ratios enable more optimum revs. Infinate ratios takes this to the logical conclusion of best possible fuel efficiency from a given engine (taking the engine as a given whole and ignoring any possible changes anywhere else in the drivetrain).
