A quick question that I need help with:
- What is the purpose of the fluroescent in the cathode ray tube?

To change the electrons kinetic energy (the cathode ray's), into light energy.

As the electron hits the atoms it rapidly slows down transferring its energy to the other atoms, whose electrons jump an energy level and when they fall back down release photons (the last bit may be incorrect because Im not sure if fluroescent produce light differently to how it works in a light bulb)

yea, xayma... i think that's how it works... when electrons hit the fluorescent material, the electrons of the fluorescent material atoms can get enough energy to jump into next unfilled orbital... when they fall back down, they emit the excessive energy as a form of light...
