Hey, would it be extremely beneficial if one did all or most ofthe 3U cambridge extension questions? Because, they are insanely hard and I don't know whether I should just skip them and do exercises up to only the 'development' section?

I highly recommend you to NOT do them. Cos, the HSC exams dont get that hard. For you interest, you may do them. But, of no use.

I can't do most of them anyway. :( Although the ones in chapter one are easy (Algebra).

In my opinion you would be best of not doing any extension questions from cambridge as most of them are out the scope of the syllabus and well above HSC standards. Just do foundation/development till you get a hang of the concept and then hit the past HSC's. Past HSC's is the most efficient way to study in my opinion.
