The ATAR is released on the 17th of December.

Generally, preferences for the main round offers should be made by the 6th of January (http://www.uac.edu.au/undergraduate/offers/dates.shtml)

By that logic, could i hypothetically, just put in random courses (I haven't and i know for a fact, all my courses will not require extra documentations/ extra stuff to fill out) then wait until after my ATAR has been released, and change my preferences accordingly (before the main rounds) ??

yes you can change your prefs to a more "realistic" course after you've received your atar

No reason you shouldn't However early round offers do exist.
My personal judgement is to set your preferences post HSC after extensive research on all options. A good method is to use excel and weight the degrees on factors such as transport time, perceived teaching quality, student experience, etc...
