40 CP is the standard number of CP per semester ie four subjects. The 50 CP warning just means you cannot enrol in more than 50 CP per semester without permission from your course coordinator (ie can do 5 subjects max).

Word of advice: go for at least the first two days. Why? So that you are settled in, know where things are, who is who and what to do before classes start so you can hit the ground running. Once other students return and your classes start, everywhere gets busy and can be really confusing...

You don't have to be religious to go to ACU full stop. It's a public university, open to all. It makes no difference if you are Catholic, if you follow another religion or have no religion at all. Everyone is welcome and treated the same.

I would strongly recommend the 4yr BT/BA course over the Dip. I'm in my 3rd year of the course and absolutely loving it! You get a lot more practicum experience and do a lot more education subjects. Thinking about it, I think we do two times the number of units in education as DipEd students...
